Makovnjača is a poppy seed roll and is one of the favorite desserts at Christmas and Easter time in Croatia.

STEP 1
Mix poppy seeds, 3/4 cup sugar, hot milk, 1 tablespoon melted butter, and lemon juice together in a bowl until well combined. Cover and refrigerate while making bread.

STEP 2
 Pour warm water in a small bowl, add sugar and yeast and let sit for 10 minutes.

STEP 3 Whisk flour and salt together in a bowl. Cut in butter and mix with hands until the mixture resembles coarse crumbs. Add yeast mixture from STEP 2 and egg yolk than stir to make a soft dough.

STEP 4 Onto a floured work surface knead the dough until smooth and roll it out. 

STEP 5 Spread the filling onto the rolled out dough and roll it up.

STEP 6
 Place the roll onto the parchment paper and let it rest for an hour until doubled.

STEP 7 Preheat the oven to 350 degrees F and brush loaves with beaten egg white.

STEP 8 Bake in preheated oven for 30 to 40 minutes. Then cover with a clean kitchen towel until cool.

Serve cold. Traditionally is served with a glass of milk.

Ingredients for poppy seed filling

  • 1/2lb poppy seed
  • 3/4 cup white sugar
  • 1/2 cup hot milk
  • 1 Tbsp. melted butter
  • 1 tsp. lemon juice

  • 1/2 cup warm water
  • 1 package active dry yeast
  • 2-3 cups all purpose flour
  • 1 egg yolk (reserve the white) 
  • 1/4 cup butter
  • 2 Tbsp. white sugar
  • 1/2 tsp. salt

FELLOW AMATEUR CHEF TIP: You can process the poppy seeds in a food processor until grounded to flour if you prefer the filling to be a smoother mixture.
You can make two smaller loafs if you divide the dough in half and roll each piece separately then spread the filling and bake them next to each other on the same oven dish.
