STEP 1
Cook pasta according to package directions for al dente.

STEP 2
 In a pan heat olive oil over medium heat and add minced garlic and shrimp. Cook for 5 to 10 minutes until shrimp are pink. Once done remove them from the pan and set them aside.

STEP 3 Stir cranberries and wine into same pan. Bring to a boil. Cook until liquid is almost evaporated, about 5 minutes.

STEP 4 Drain pasta, reserving 1 cup of pasta water. Add pasta to the pan.

STEP 5 Stir in cream cheese, Gorgonzola cheese, spinach, parsley, salt and reserved shrimp.

STEP 6
 Cook and stir about 5 minutes until mixture is heated through and cheeses are melted. Add reserved pasta water if necessary to reach desired consistency.

  • 3 tbsp minced fresh parsley
  • 1/4 teaspoon salt
  • 1/3 cup chopped walnuts
