Walnut roll is a sweet bread made in many countries in Eastern Europe. Polish, Hungarian and Croatian rolls are the most popular ones. Traditionally made for Christmas and Easter. Nevertheless many households make it just to enjoy it for breakfast or dinner with a cup of tea or milk.

STEP 1
Pour warm water in a small bowl, add vanilla sugar and yeast and let sit for 10 minutes.

STEP 2
 Then to that mixture, add 1 egg, salt, white sugar, melted butter, lemon zest, rum and mix all ingredients with an electric mixer for 30 seconds.

STEP 3 Add 1.5 cups of flour and mix well until well combined. You can add extra flour if needed. 

STEP 4 Shape the dough into a ball and cover with plastic wrap and let it rise until double in size for about an hour.

STEP 5 In a saucepan warm the milk, then add the walnuts, honey, raisins and the lemon zest and mix.

STEP 6
 Add the sugar and cinnamon, and cook on low for approx. 10 minutes until the milk is incorporated into walnuts.

STEP 7 Remove from the heat. Add in the rum and butter and mix well.

STEP 8 Cool the mixture in the fridge.

STEP 9 Once the dough is risen, cut it in equal halves. Roll out each piece to 20 inches by 14 inches.

STEP 10 Remove the mixture from the fridge and separate it into two equal halves. Spread one half of the filling, onto one piece of the rolled out dough. Roll into a sausage roll, and on the last two inches use a pastry brush and apply an egg yolk wash to seal it. Then transfer it to a pan lined with paper. Repeat the same process for the second roll.

STEP 11 Poke both rolls all over with a toothpick, then glaze with an egg wash.

STEP 12  Allow them to rise for one hour for them to double in size.

STEP 13 Bake uncovered at 300°F for 20 minutes, then bake for an extra 40 minutes covered with aluminum foil to avoid burning them.

STEP 14 Allow the walnut rolls to cool slightly in the pan for 20 minutes before serving them.

  • 2 Tbsp. honey
  • 1/2 a cup raisins
  • 3/4 white sugar
  • 1 tsp. grounded cinammon
  • 1 Tbsp. rum
  • 2 Tbsp. melted butter
  • zest of a lemon
